Abstract

En los últimos siglos, en un contexto de industrialización, globalización y urbanización, se han sucedido profundos cambios en la dieta. El acceso generalizado a productos poco saludables, pero baratos y muy apetecibles, además de una publicidad agresiva que condiciona fuertemente las normas sociales, nos ha llevado a un consumo excesivo de alimentos con un alto valor energético pero pocos nutrientes. Esto se ha asociado no solamente con una mayor prevalencia de obesidad y enfermedades no transmisibles relacionadas con la alimentación, sino también con efectos perjudiciales para los recursos naturales mundiales. Junto con estrategias educativas que fomenten el consumo de alimentos saludables y sostenibles, se deberían implementar medidas de salud pública con un enfoque integral para favorecer la accesibilidad física y económica de materias primas y alimentos mínimamente procesados.
